Recipe: Kimchi Queso



  • 1 1/2 cups pureed kimchi

  • 2-3 Tb kimchi "juice" or sauce OR sriracha

  • 5 cups grated cheddar cheese

  • 1 cup sour cream

  • 1 chopped green onion


  1. Melt cheese under low heat

  2. Add sour cream and mix until smooth

  3. Add kimchi, kimchi juice or sriricha, and mix until well integrated.

  4. Serve with green onions on top.

Great for nachos, beans, enchandilas, anything that needs a zesty cheese sauce!
